Pork sausage & tomato pan eggs

This is baked egg territory...just easier! Relying on one pan to bring the whole dish together this is one of our favourite weekend breakfasts to enjoy when we have friends staying. A cut above simple eggs on toast, this will definitely make your guests feel special or a weekend breakfast at home with your gang just a touch more elevated. Add some coffees and a newspaper and you're set. 

Ingredients 

½ tsp ghee

2 pork sausages (thick tasty pork or pork & fennel are perfect)

2 cloves garlic sliced 

1 small brown onion sliced 

400g whole tomato can 

1 tsp ground cumin 

1 tsp paprika 

1 tsp chilli flakes 

½ tsp honey

5 eggs 

½ cup feta cheese

¼ cup fresh basil leaves 

¼ cup fresh parsley leaves 

Salt & pepper  

 

Method 

  1. Cut open the sausages and place the mince into a frypan on medium heat. Cook for 2 mins, then add the onions, garlic, cumin, chilli flakes and cook for 4-5 minutes until sausage mince is cooked completely. 
  2. Next add the paprika and cook for 1 minute, then add the tomatoes. Break up the tomatoes into smaller pieces and cook for 10 minutes. 
  3. Season with salt & pepper and add the honey. Give this a good mix then crack your eggs into the pan. Season the eggs and crumble the feta over the top. 
  4. Cook with the lid on for 3-5 minutes on medium - high or until egg whites are cooked and cheese has melted nicely. Roughly chop the fresh herbs and sprinkle over the eggs. Serve with freshly toasted sourdough, gluten free bread or potatoes.
